Baked Apple Oatmeal

This recipe is the perfect make-ahead recipe for those busy mornings you are rushing out the door or eating breakfast at your desk! Just a few simple ingredients and a short cook time and you’ve got breakfast all week. It reheats well so you don’t have to eat it all in one day.

  • Total Time: 14 minutes

Ingredients

1 1/3 cups Old Fashioned Oats, uncooked

¼ Cup packed Brown Sugar 

1/3 Cup Craisins

¼ Cup Chopped Walnuts or Pecans

½ tsp Cinnamon

1 2/3 Cups unsweetened almond or regular milk

1/3 to ½ Cup Unsweetened Apple Sauce or Pureed

Pumpkin

½ tsp Vanilla

1 small Apple, chopped or grated

Fresh Berries or Sliced Bananas for topping (optional)

Instructions

Combine all ingredients (except the optional bananas or

berries) in the Rockcrok Everyday Pan. Microwave covered

for 9 minutes.

Scoop into serving bowls with a splash of milk and top

with fresh berries or bananas.

Store leftovers in the refrigerator for up to 4 days.

Notes

I haven’t made this recipe in other vessels but if you have a piece of Pampered Chef stoneware with a lid, it would work perfect in that too!
