1 lb ground Italian sausage
1 box of penne pasta
1 carton chicken broth
1 jar of marinara sauce
2 cloves garlic
1 Tbsp Pampered Chef Three Onion Rub
1 Tbsp Pampered Chef Italian seasoning
2 small zucchini, cut into small pieces or French fry cut with the Rapid Prep Mandoline
1 cup cherry tomatoes, sliced in half with Close N Cut
2 cups mozzarella cheese, grated
1/2 cup Parmesan, finely grated
Cook Sausage until browned using Mix n Chop. Drain any fat. Set aside.
Add box of penne pasta to the RockCrok Dutch Oven.
Cover with 1 carton chicken broth. Microwave, uncovered for 16 minutes, stirring halfway through. Drain pasta if needed.
Add marinara, garlic pressed with garlic press.
Add zucchini and tomatoes to Pasta Mixture.
Grate Mozzarella & Parmesan cheese.
Add 1 cup grated mozzarella to pasta mixture. Microwave 2-3 minutes until Zucchini is Crisp tender and cheese is melted
Remove from Microwave and top with remaining mozzarella and Parmesan cheese.
Broil or use a kitchen torch until cheese is golden brown and bubbly, about 5 minutes, check frequently.
